Apitsi – Steamed Plantain

Apitsi is a savoury plantain street snack, popularly found on the streets of Takoradi in the Western Region of Ghana. Wrapped and cooked in waakye leaves, it ready to take along with you and mostly enjoyed with some dry roasted groundnuts/peanuts.
This recipe is simplified with reference to one of my food mentors Patti Sloley. I hope you enjoy it as much as I still do.
All you will need
3-4 overripe plantain
3 tablespoon of Kat’s Super Trio Blend
1/2 cup of roast corn mix (tom brown)
Salt/Stock cube
Roasted Peanuts
How to Prepare Apitsi – Steamed Plantain
Blend all ingredients but peanuts, together.
Mix in peanuts.
Then wrapped in leaves (or baking sheet in absence of waakye leaves).
Steam bake 150°c until when poked, comes out clean or bake for 45mins-1hour.
