Fisherman Soup

This soup is basically using any seafood the fisherman brings from the sea, hence its name. Personally, I like the simplicity of this soup and the best part is that you can enjoy it with almost anything your pantry has to offer. I hope you enjoy this as much as most Ghanaians in the Central Region of Ghana does.
You will need:
1 small onion
2 garlic gloves
2 habanero chillies, very optional
2 tbsp. of tomato paste
5 medium-size fresh tomatoes
1 tsp. each of white pepper, ginger powder, curry powder and coriander powder.
1-2 litres of water or vegetable stock
Salt to taste
500 g -700 g of mussels

How to make Fisherman Soup:
Wash, cut up and add all vegetables, tomato paste and spices to the saucepan.
Add 1 litre of water/stock and bring to boil for about 30 mins or until onion is cooked through.
Blend all together and return to saucepan. Depending on how the stock is reduced, add more water/stock.
Adjust spices, salt and bring to a boil for another 15 mins.
Prep mussels by removing their beards and discarding any that is already opened.
Add mussels to soup and cover to help the mussels cook through by opening fully.

Enjoy with bread, fufu, garifufuo or by itself as a delicious starter #katsfoods
